In a small bowl, dissolve yeast in warm milk with a teaspoon of sugar. Let it sit 5–10 minutes until foamy. In a large mixing bowl, combine flour, remaining sugar, and salt. Add eggs, melted butter, and the yeast mixture. Knead until smooth and elastic, about 8–10 minutes.
First Rise:
Place the dough in a greased bowl, cover, and let rise in a warm place until doubled in size, about 1–2 hours.
Shape the Pączki:
Roll the dough out to about 1/2 inch thickness. Cut into circles using a cookie cutter or glass. Place a teaspoon of filling in the center of half the circles, then cover with another circle and pinch the edges to seal.
Second Rise:
Place the filled donuts on a parchment-lined tray, cover, and let them rise 30–45 minutes until puffy.
Fry the Donuts:
Heat oil in a deep fryer or heavy skillet to 350°F (175°C). Carefully fry the donuts a few at a time, turning once, until golden brown on both sides. Drain on paper towels.
Finish:
Once slightly cooled, dust with powdered sugar or drizzle with glaze.
