Seafood Fried Rice

  1. Preheat your grill or grill pan to medium-high heat.

  2. In a bowl, toss the shrimp with olive oil, garlic powder, smoked paprika, onion powder, cayenne pepper (if using), salt, and black pepper.

  3. Place the shrimp on the grill and cook 2–3 minutes per side, until pink and opaque. Remove from heat and set aside.

2. Make the Fried Rice:

  1. Heat vegetable oil in a large skillet or wok over medium-high heat. Add onions, garlic, and bell peppers. Sauté 2–3 minutes until softened.

  2. Stir in carrots and peas (if using) and cook another 2 minutes.

  3. Push the vegetables to one side of the skillet. Add the cold rice and break up any clumps, mixing everything together.

  4. Pour the beaten eggs into the empty space in the skillet and scramble. Once cooked, mix into the rice.

  5. Season with soy sauce, sesame oil, smoked paprika, salt, and black pepper. Stir until well combined and heated through.
