Slow Cooker Pork Chops & Rice

  1. Season both sides of the pork chops with salt and pepper.

  2. Heat olive oil in a skillet over medium-high heat. Sear pork chops 1–2 minutes per side until golden brown. Transfer them to the slow cooker.

  3. In the same skillet, sauté the sliced onion until translucent and slightly caramelized. Spread onions over the pork chops in the slow cooker.

  4. Pour chicken broth into the slow cooker and add Worcestershire sauce. Stir gently to combine.

  5. Cover and cook on low for 6–8 hours or high for 3–4 hours, until the pork chops are tender.

  6. About 1 hour before serving, stir in the rice. If necessary, remove the pork chops briefly to stir the rice evenly, then return the chops and continue cooking until the rice has absorbed the liquid.

  7. Let the dish rest a few minutes before serving. Garnish with fresh herbs if desired.

  8. Serve hot with your choice of sides and enjoy a comforting, home-cooked meal.
