Cook the Eggs
Place eggs in a saucepan and cover with cold water.
Bring to a boil over medium heat, then simmer 9–12 minutes until hard-cooked.
Transfer to ice water to cool completely, then peel.
Prepare the Filling
Slice eggs in half lengthwise and remove yolks carefully.
Mash yolks in a bowl with mayonnaise, mustard, vinegar, salt, and pepper until smooth.
Fill the Eggs
Spoon or pipe the yolk mixture back into the egg whites.
Garnish
Sprinkle with paprika and optionally top with chives or pickle slices.
Chill Before Serving
Refrigerate at least 30 minutes to allow flavors to meld.
